Marqués de Mendiola also makes raw milk cheeses with Organic Certification, with a curing time of between 3 and 14 months, depending on the type of cheese.

Marqués de Mendiola Bio Cured Cheese. Aged for 6-8 months.

SOTO DEL MARQUÉS ORGANIC MANCHEGO CHEESE
Manchego Organic Cheese. Our organic cheeses:
Our cheeses are distributed under the commercial firm Soto del Marqués. All our cheeses are made with raw sheep's milk with PDO Manchego.
- Semi-cured cheese: this young Manchego has a curing period of 3 months, which is when it obtains its characteristic and pleasant flavour, with a grassy aroma and a subtle spicy touch.
- Cured Cheese: it has a curing period of 6 months, with a rich aroma characteristic of cheeses made with pure sheep's milk. It has a more intense flavour and a slight touch of acidity.
- Queso Añejo: has a curing period of 12 months, with a grainy texture, an intense flavour due to the curing time and a very rounded finish with hints of nuts.
Our cheeses are available in whole pieces of 2kg or 3kg and in vacuum-packed wedges of different weights on request.
